Simply open the cover and pour water onto the wheels. Hold the grip tightly and move the blade back and forth through the guidance slot. After sharpening, open the cover and clean the inside with water. Please note this Kasumi Hand-Held Diamond Knife Sharpener is designed for slimmer Japanese-style knives which are sharpened on both sides. It is not suitable for knives such as a Sashimi, which are sharpened on one side only, nor for some of the broader-bladed European style knives.
